Looks like Tuna salad
What do you do when you want the taste of Tuna Salad, yet no longer eat tuna? You make Looks Like Tuna Salad (also called TuNo salad). With a can of chickpeas, or some home cooked chickpeas you can recreate this beloved salad. Put it in a pita, between a couple slices of sourdough bread, or on a plate with fresh leafy salad greens.
This can be made any time of the year, though in the spring you can add spring onions and delicious sweet peas to make a special treat. And of course in the summer, those juicy sweet heirloom tomatoes make this salad unforgettable.
Ingredients
1 1/2 cups cooked chickpeas, or 1 can drained and rinsed
2 Tablespoons tahini
1-2 Tablespoons extra virgin olive oil
1 Tablespoon apple cider vinegar
1 teaspoon Dijon mustard
1 dill pickle spear, finely chopped
1 small celery stick, finely chopped
1/2 small red onion, finely chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
Put chickpeas in a large bowl and smash them with a fork, leaving some of them slightly crushed.
Add tahini, olive oil, apple cider vinegar, and mustard. Mix well. Stir in dill pickle, celery, and onion. Add salt and pepper, mixing to incorporate. Taste for seasonings, adding more if needed. If mixture is too dry, add more olive oil.
Makes 4 servings.
