Mixed Green Summer Salad

It’s summer and the farmers markets are full of the freshest seasonal produce! Find the most beautiful tomatoes and a variety of salad green. Pick out some sweet colorful carrots and other tender young root vegetables along with a variety of green summer squashes. Put it all together with a simple fresh homemade dressing and you have the taste of summer on a plate!!


Ingredients

  • 2 cups mixed salad greens

  • 1/2 cup shredded carrot

  • 1/4 cup shredded radish

  • 1/2 zucchini, quartered lengthwise and thinly sliced

  • 1/4 small red onion, thinly sliced

  • 1 small tomato, chopped or a handful of grape or cherry tomatoes

Dressing

  • 1/4 cup extra virgin olive oil

  • 2 Tablespoons fresh lemon or lime juice

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 1 clove garlic, crushed

  • leaves from 1 stem of fresh thyme


Put all salad ingredients in a bowl or on a plate.

Mix dressing ingredients in a measuring cup and whisk well. Pour desired amount over salad.

Makes 1 salad.
